Despite established hygiene and safety standards in the meat industry, industrial slaughtering processes often result in contamination of the meat surface with pathogenic microorganisms such as Salmonella spp., Campylobacter spp. or Listeria spp., which pose a potential health risk for employees and consumers. Current disinfection processes are based on the use of aggressive chemicals, which can be detrimental to food and hazardous to the environment. As part of the joint project Photodekon funded by the Federal Ministry of Food and Agriculture, the applicability of antimicrobial photodynamics in an industrial food processing environment with complex hygiene requirements was investigated. In particular, conveyor belts or plant components that come into direct contact with meat were addressed within the cooperation between the research partners Fraunhofer IVV and Regensburg University Hospital as well as the companies TriOptoTec GmbH and Hubl GmbH. The objective was the development of a process for spray disinfection of conveyor belts as well as stable antimicrobial coatings. The work of the research institutions focused on testing the antimicrobial effectiveness of the food-grade photosensitizers, the developed coatings and the spray solutions. Especially the photodynamic spray disinfection revealed promising results. Field tests showed a reduction of microbial contaminations by 90% under practical conditions.
